Ingredients

Scale

Primary Ingredients

  • 200g good quality white chocolate
  • 250g fresh ripe strawberries
  • 300ml heavy cream, cold
  • 3 gelatin sheets or 1 tablespoon powdered gelatin
  • 50g sugar (adjust based on strawberry sweetness)
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter

Instructions

  1. Prepare the Strawberry Puree: Wash and hull the fresh strawberries, then blend them into a smooth puree. Strain to remove seeds for a silky texture if desired. Stir in lemon juice and sugar to balance sweetness and acidity.
  2. Bloom the Gelatin: Soak gelatin sheets in cold water until softened, or sprinkle powdered gelatin over cold water and let it bloom fully. This ensures the mousse sets properly without losing its lightness.
  3. Melt the White Chocolate: Gently melt the white chocolate with butter using a double boiler or microwave in short intervals, stirring continuously to prevent burning, until smooth and glossy.
  4. Whip the Cream: Whip the cold heavy cream to soft peaks, maintaining a light and airy texture that will give the mousse its signature fluffiness.
  5. Combine Mixtures: Warm the bloomed gelatin slightly to dissolve, then mix it into the melted white chocolate. Fold in the strawberry puree carefully, followed by gently folding in the whipped cream to preserve airiness.
  6. Mold the Domes: Pour the mousse mixture into silicone dome molds or small bowls lined with plastic wrap. Tap gently to remove air bubbles and refrigerate for at least 4 hours or until completely set.
  7. Unmold and Serve: Briefly dip molds in warm water to loosen the edges, then carefully invert onto serving plates. Garnish as desired and enjoy the elegant presentation and delicious flavors.

Notes

  • Use high-quality white chocolate for the best texture and flavor.
  • Chill bowls and beaters before whipping cream to achieve stable soft peaks.
  • Fold whipped cream gently to keep the mousse light and airy.
  • Allow adequate chilling time (minimum 4 hours) to ensure the mousse holds shape well.
  • These mousse domes can be prepared a day in advance to enhance flavor development.
