Instructions

  1. Prepare the batter: Whisk eggs and sugar together until pale and creamy. Gently fold in the all-purpose flour and baking powder, followed by the melted butter, espresso, mascarpone cheese, and vanilla extract. Mix until the batter is smooth, slightly thick, and airy for a tender crumb.
  2. Chill the batter: Refrigerate the batter for at least 30 minutes to help the madeleines develop their signature hump and ensure even texture during baking.
  3. Preheat and prepare the mold: Preheat oven to 375°F (190°C). Thoroughly grease madeleine molds with butter and dust with flour to prevent sticking and promote even browning.
