Ingredients

Scale

Main Ingredients

  • 3 lbs Russet potatoes, peeled and cubed
  • 1 lb Andouille sausage, sliced (optional)
  • 1 cup diced bell peppers (any color)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp Cajun seasoning (paprika, cayenne, garlic powder, oregano, thyme blend)
  • 6 cups chicken broth or vegetable broth
  • 1 cup heavy cream or milk
  • 2 tbsp olive oil or butter

For Garnish

  • 2 green onions, chopped
  • 2 tbsp fresh parsley, chopped
  • Optional: shredded cheddar or pepper jack cheese

Instructions

  1. Prep the Vegetables and Sausage: Peel and cube the russet potatoes to ensure even cooking. Dice the bell peppers and onion, and mince the garlic. Slice the andouille sausage into bite-sized pieces if using. This preparation forms the base of flavors.
  2. Sauté Aromatics and Sausage: Heat olive oil or butter in a large pot over medium heat. Add the andouille sausage first and brown lightly for smoky depth. Then add the onion, garlic, and bell peppers, cooking until softened and fragrant, about 5 minutes.
  3. Add Potatoes and Cajun Seasoning: Stir in the cubed potatoes and sprinkle the Cajun seasoning over them. Mix well so the potatoes are evenly coated with the spices, enhancing their flavor.
  4. Pour in Broth and Simmer: Add the chicken or vegetable broth and bring the mixture to a boil. Reduce heat to a simmer and cook until the potatoes are tender, about 15 to 20 minutes, allowing the flavors to meld.
  5. Blend for Creaminess: Partially puree the soup using an immersion blender or by transferring a portion to a blender. Leave some potato chunks for texture, creating a creamy yet hearty consistency.
  6. Stir in Cream and Adjust Seasoning: Slowly add the heavy cream or milk, stirring gently. Warm through without boiling, then taste and adjust salt, pepper, and spice levels to your preference.

Notes

  • Cut potatoes into uniform sizes for even cooking.
  • Use fresh or homemade Cajun seasoning for maximum flavor.
  • Adjust cayenne pepper gradually to control heat intensity.
  • Do not overblend; leaving some chunks adds pleasing texture.
  • If omitting sausage, add smoked paprika or liquid smoke for smoky flavor.
