Ingredients

Scale

Peppers

  • 1215 mini sweet peppers, bright and firm

Filling

  • 4 oz (115g) goat cheese, softened
  • 12 tbsp fresh herbs (basil, thyme, or parsley), finely chopped
  • 1 tsp lemon zest (optional)

Roasting & Seasoning

  • 12 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt, to taste
  • Freshly ground black pepper, to taste

Optional Garnishes & Variations

  • Red pepper flakes or chopped jalapeño (for spicy version)
  • Toasted pine nuts or chopped walnuts (for nutty crunch)
  • Drizzle of honey or balsamic glaze (for sweet and savory)

Instructions

  1. Prepare the Peppers: Wash the mini peppers and cut them in half lengthwise. Remove the seeds and membranes carefully to create a perfect little boat for the goat cheese filling.
  2. Roast the Peppers: Toss the pepper halves with olive oil, garlic powder, salt, and freshly ground black pepper. Spread them on a baking sheet and roast in a preheated oven at 400°F (200°C) for 12-15 minutes until they soften slightly and develop a roasted aroma and color.
  3. Mix the Filling: While the peppers roast, let the goat cheese soften at room temperature. Combine the goat cheese with finely chopped fresh herbs and lemon zest if using, stirring until you have a smooth and flavorful mixture.
  4. Stuff the Peppers: Once the roasted peppers have cooled slightly, spoon the goat cheese mixture generously into each pepper half. Optionally, sprinkle with extra fresh herbs or toasted nuts for garnish.
  5. Final Touch: Optionally, return the stuffed peppers to the oven for 3-5 minutes to warm the cheese slightly, or serve them chilled for a refreshing snack.

Notes

  • Pick firm mini peppers without wrinkles for the best texture after roasting.
  • Allow goat cheese to come to room temperature to ensure easy mixing and a smooth filling.
  • Do not over-roast peppers; they should be tender yet still hold their shape.
  • Use fresh herbs for vibrant flavor rather than dried.
  • These stuffed peppers can be prepared ahead and refrigerated for up to a day, served cold or gently warmed.
