Ingredients

Scale

Fish

  • 4 red snapper fillets (fresh or thawed)
  • Salt and pepper, to taste
  • 12 tablespoons olive oil (for cooking fish and sautéing)

Vegetables & Aromatics

  • 1 medium onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 stalks celery, finely chopped
  • 3 cloves garlic, minced

Sauce

  • 1 can (14 oz) crushed tomatoes
  • 12 tablespoons Creole seasoning (adjust to taste)
  • 1 cup heavy cream
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Garnish

  • 2 tablespoons fresh parsley, chopped
  • 2 green onions, sliced

Instructions

  1. Prepare the Vegetables: Finely chop the onion, red and green bell peppers, celery, and garlic. Heat olive oil in a skillet over medium heat and sauté the chopped vegetables gently until tender and fragrant, about 5-7 minutes.
  2. Make the Creole Sauce: Add crushed tomatoes and Creole seasoning to the sautéed vegetables. Stir well and let the mixture simmer for 10 minutes to blend the flavors. Slowly pour in the heavy cream while stirring, creating a smooth, luscious sauce. Season with salt and pepper to taste.
  3. Cook the Red Snapper: Pat the fillets dry and season both sides lightly with salt and pepper. In a separate skillet, heat olive oil over medium-high heat. Cook the fillets for 3-4 minutes per side, until the fish is cooked through, flaky, but still moist.
  4. Combine and Finish: Transfer the cooked snapper fillets into the skillet with the creamy Creole sauce. Spoon sauce over the fillets and simmer together for another 2 minutes to warm and infuse flavors.

Notes

  • Use the freshest red snapper possible for optimal texture and flavor.
  • Allow the sauce to simmer slowly to develop richer, balanced flavors.
  • Adjust Creole seasoning gradually to control spice level.
  • Serve immediately for best tenderness and taste.
  • Use a non-stick skillet to prevent the fish from sticking and breaking.
