Instructions

  1. Cook the noodles: Bring a large pot of salted water to a boil. Add your choice of egg or ramen noodles and cook according to package instructions until just tender. Drain and rinse under cold water to stop cooking and set aside.
  2. Prepare the slaw: In a large bowl, combine shredded green and Napa cabbage, grated carrot, and sliced scallions. In a separate small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), minced garlic, and ginger. Pour the dressing over the vegetables and toss well to coat evenly. Let it marinate while you cook the potstickers.
  3. Cook the potstickers: Heat a non-stick skillet over medium-high heat and add 1 tablespoon of neutral oil. Arrange the potstickers in a single layer. Fry until the bottoms are golden and crisp, about 2-3 minutes. Add a splash of water (approximately 1/4 cup), cover immediately, and steam for about 5 minutes more or until water evaporates and potstickers are cooked through.
  4. Assemble the bowl: Place a generous bed of cooked noodles in each serving bowl. Top with a heap of the prepared cabbage slaw, then arrange the crispy potstickers on top. Garnish with toasted sesame seeds, extra scallions, and optional chili flakes for added flavor.
