Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cup cucumber, grated and excess moisture squeezed out
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • Pinch of salt

Veggie and Bowl Base

  • 1 cup cooked brown rice, quinoa, couscous, or leafy greens
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced cucumbers
  • Optional: Kalamata olives, crumbled feta cheese
  • Extra virgin olive oil, for drizzling

Instructions

  1. Prepare the Meatball Mixture: In a bowl, combine the ground meat with chopped onion, minced garlic, parsley, mint, oregano, cumin, salt, and pepper. Mix gently until just combined to keep the meatballs tender.
  2. Shape and Cook the Meatballs: Form the mixture into small, uniform walnut-sized meatballs. Heat olive oil in a skillet over medium heat and cook the meatballs until golden brown on all sides and cooked through, about 8 to 10 minutes. Alternatively, bake at 400°F (200°C) for 20 minutes, turning halfway.
  3. Make the Tzatziki Sauce: While the meatballs cook, combine grated cucumber (with excess water squeezed out) with Greek yogurt, minced garlic, lemon juice, chopped dill, and a pinch of salt. Stir together until smooth and creamy.
  4. Prepare the Bowl Base and Veggies: Cook your choice of grains such as brown rice or quinoa, or wash and chop leafy greens. Dice tomatoes and slice cucumbers for fresh crunch.
