Gourmet Tiramisu Yule Log Cake

The Gourmet Tiramisu Yule Log Cake is a festive and elegant holiday dessert that combines the classic flavors of tiramisu with the charming presentation of a traditional yule log. Featuring layers of light coffee-soaked sponge, creamy mascarpone filling, and a dusting of cocoa powder, this cake delights with a balanced richness and sophisticated flavor profile, perfect for Christmas, New Year’s, or any winter celebration.

Ingredients

Scale

Sponge Cake

  • 4 large eggs
  • 3/4 cup sugar
  • 3/4 cup all-purpose flour (or almond flour/gluten-free baking mix for variation)

Coffee Syrup

  • 1 cup strong espresso or strong brewed coffee
  • 2 tablespoons sugar

Mascarpone Filling

  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Decoration

  • 2 tablespoons cocoa powder, for dusting
  • Chocolate shavings or edible holly leaves (optional)

Instructions

  1. Prepare the Sponge Cake: Whip eggs and sugar until pale and fluffy, then gently fold in sifted flour to keep the batter light. Spread evenly on a lined baking tray and bake at 350°F (175°C) for 10-12 minutes or until springy and golden.
  2. Make the Coffee Syrup: Combine strong espresso with sugar, stirring until dissolved. This syrup will be brushed onto the sponge to infuse moisture and coffee flavor.
  3. Whip the Mascarpone Filling: Beat heavy cream, mascarpone cheese, sugar, and vanilla extract together until thick and creamy, creating a luscious filling that defines tiramisu.
  4. Assemble the Yule Log: Carefully flip the baked sponge onto a clean cloth sprinkled with powdered sugar, peel off the parchment paper, and roll tightly to set the shape. Unroll, brush generously with coffee syrup, spread mascarpone filling evenly, then re-roll into the log form.
  5. Decorate and Dust: Cover the roll with remaining mascarpone cream, using a fork to create bark-like texture. Finish by dusting with cocoa powder and adding optional festive decorations like chocolate shavings or edible holly leaves.

Notes

  • Fold the flour gently to maintain an airy sponge and avoid density.
  • Let the sponge cool slightly before rolling to prevent cracking.
  • Use freshly brewed strong espresso for the best flavor in the coffee syrup.
  • Chill mixing bowls and beaters to stabilize whipped cream.
  • Use a fork or spatula to add realistic bark texture to the yule log surface.
