Instructions

  1. Prepare the soaking liquid: Combine the amaretto liqueur with cherry juice or fresh cherry syrup in a shallow dish, ensuring the flavors meld together perfectly to soak the ladyfinger biscuits without making them soggy.
  2. Whisk the custard base: In a heatproof bowl over a double boiler, gently whisk the egg yolks and sugar until the mixture becomes pale and thick, then remove from heat and fold in the mascarpone cheese until smooth and creamy.
  3. Whip the cream: Beat the heavy cream until soft peaks form, then carefully fold it into the mascarpone custard mixture to create a light and airy filling.
  4. Assemble the tiramisu: Briefly dip each ladyfinger in the amaretto-cherry soak and layer them evenly in the serving dish. Spread half of the mascarpone cream over the ladyfingers, then sprinkle a layer of fresh cherries on top. Repeat the process with another layer of soaked ladyfingers and mascarpone cream, finishing with a layer of cherries.
  5. Chill and finish: Refrigerate the assembled tiramisu for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set. Before serving, dust the top generously with cocoa powder for a classic tiramisu finish.
