Ideal for weddings, holidays, or family dinners, this comforting dish is easy to make, customizable, and guaranteed to impress your guests with its rich flavor and satisfying texture.

Ingredients

Scale

Potatoes

  • Diced fresh potatoes or frozen hash browns (about 4 cups)

Cheese Sauce

  • 1 cup sour cream
  • 1/2 cup melted butter
  • 2 cups shredded cheddar cheese (sharp or mild)
  • 1/4 cup finely chopped onion or 1 tsp onion powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Topping

  • 1 1/2 cups crunchy topping such as crushed cornflakes, fried onions, or breadcrumbs
  • 2 tbsp butter, cut into small pieces (for dotting on top)

Instructions

  1. Prepare Your Potatoes: Peel and dice fresh potatoes into bite-sized cubes, then boil until just tender. If using frozen hash browns, thaw and drain any excess moisture thoroughly to prevent sogginess.
  2. Make the Creamy Cheese Mixture: In a large bowl, combine sour cream, melted butter, shredded cheddar cheese, chopped onion or onion powder, garlic powder, salt, and pepper. Mix well until smooth and creamy.
  3. Combine Potatoes and Cheese Sauce: Gently toss the cooked or thawed potatoes into the cheese mixture, ensuring every piece is well coated with the flavorful sauce.
  4. Add the Topping: Evenly sprinkle your choice of crunchy topping over the potato mixture in a greased casserole dish. Dot the top with small pieces of butter to promote browning.
  5. Bake Until Golden and Bubbling: Place the casserole dish in a preheated oven at 350°F (175°C) and bake for 30-40 minutes or until the topping is crisp and golden and the inside is hot and bubbling.

Notes

  • Use day-old potatoes for firmer texture and less mushiness.
  • Make sure to drain frozen potatoes well to avoid sogginess.
  • For more complex flavor, blend cheddar with mozzarella or Monterey Jack cheese.
  • Don’t skip adding butter on top for a golden crust.
  • Let the casserole rest a few minutes before serving to allow it to set and slice cleanly.
