Ingredients

Scale

Base Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 package (about 15.25 oz) red velvet cake mix
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Red food coloring (optional, a few drops)

Coating

  • 2 cups white chocolate chips

Optional Variations & Garnishes

  • Dark chocolate for coating instead of white chocolate
  • Crushed pistachios or finely chopped pecans for rolling
  • Pinch of cinnamon or cayenne for spiced twist
  • 1 tablespoon raspberry liqueur or bourbon for alcohol-infused version
  • Dairy-free cream cheese and vegan white chocolate chips for vegan version
  • Edible glitter, crushed candy hearts, crushed freeze-dried raspberries, cocoa powder, or edible rose petals for garnishing

Instructions

  1. Mix the Base Ingredients: Combine the softened cream cheese and butter in a large mixing bowl until creamy and smooth. Gradually add the red velvet cake mix, powdered sugar, and vanilla extract, mixing thoroughly with a hand mixer or spatula. Fold in a few drops of red food coloring if you want a more intense red color.
  2. Chill the Mixture: Cover the bowl and refrigerate the batter for 30-45 minutes to firm up, making it easier to handle and shape.
  3. Shape the Truffles: Using hands or a small cookie scoop, form the chilled mixture into uniform bite-sized balls. Place them on a parchment-lined tray and refrigerate for an additional 15 minutes to help maintain their shape before coating.
  4. Prepare the Coating: Melt the white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each until smooth and silky. Be careful not to overheat or allow any water contact to avoid seizing.
  5. Coat the Truffles: Dip each chilled truffle into the melted white chocolate using a fork or dipping tool, letting excess chocolate drip back into the bowl. Place coated truffles back on the parchment and refrigerate for about an hour or until the coating is firm.
  6. Final Touches: Optionally, drizzle extra melted chocolate over the truffles or decorate with edible glitter, crushed candy hearts, or other garnishes for added romance and visual appeal.

Notes

  • Use cream cheese and butter softened to room temperature for smooth, creamy mixing.
  • Use a small cookie scoop for uniform truffle sizes to ensure even coating and presentation.
  • Do not skip chilling steps; they help the truffles hold their shape and make coating easier.
  • Stir melting chocolate slowly and avoid water to prevent chocolate from seizing.
  • Store truffles in an airtight container layered with parchment paper to avoid sticking.
