Ingredients

For the Plain Dough

  • Unsalted butter – 4 tbsp, softened (56g)
  • Sugar – ¼ cup (50g)
  • Salt – 1 tsp
  • Eggs – 2 large

For the Chocolate Dough

  • All-purpose flour – 2 ½ cups (310g)
  • Cocoa powder – ½ cup (50g), unsweetened
  • Active dry yeast – 2 ¼ tsp (one packet)
  • Milk – ¾ cup, warm (180ml)
  • Unsalted butter – 3 tbsp, softened (42g)
  • Sugar – 3 tbsp (38g)
  • Salt – ½ tsp
  • Eggs – 1 large

Optional Add-Ins

  • Chocolate chips – ½ cup (90g)
  • Chopped walnuts or hazelnuts – ½ cup (60g)
  • Dried cherries or raisins – ½ cup (75g)

Instructions

  1. Prepare the Doughs: Activate the yeast by mixing it in warm milk with a pinch of sugar until it blooms. While waiting, combine ingredients for the plain dough in one bowl and separately mix the ingredients for the chocolate dough, adding cocoa powder. Knead both doughs until smooth and elastic.
  2. First Rise: Place each dough ball in a greased bowl, cover with a damp cloth, and leave them in a warm spot to rise until doubled in size, approximately 1 hour.
  3. Roll and Layer: Roll each dough into equal-sized rectangles. Lay the chocolate dough over the plain dough to form layers, then roll them up together like a jelly roll.
  4. Twist the Dough: Slice the rolled dough lengthwise to reveal the layers. Gently twist the two pieces and join the ends to form a circular or elongated twist as preferred.
  5. Second Rise and Bake: Let your shaped twists rise for 30 minutes more. Preheat the oven to 350°F (175°C) and bake for 25-30 minutes, until golden brown and cooked through.
