Soup Base
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn kernels, drained
- 1 (14.5 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 2 cups beef broth
- 2 tbsp taco seasoning (blend of chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper)
Optional Toppings
- Shredded cheddar cheese
- Sour cream
- Fresh cilantro, chopped
- Sliced avocado
- Lime wedges
- Brown the Ground Beef: Heat a large pot over medium heat, add the ground beef, and cook until browned and crumbly. Drain any excess fat to keep the soup from being greasy.
- Sauté Onion and Garlic: Add diced onions and minced garlic to the cooked beef, stirring frequently until the onions are translucent and fragrant, about 3-5 minutes.
- Add Seasoning and Liquids: Sprinkle in your taco seasoning and stir to coat the beef mixture evenly. Pour in beef broth, diced tomatoes, and tomato sauce, then bring everything to a gentle boil.
- Stir in Beans and Corn: Drain and rinse the black beans and corn, then add them to the pot. Reduce heat and let the soup simmer for 15-20 minutes to meld flavors beautifully.
- Taste and Adjust: Give your soup a final stir, taste for seasoning, and add salt, pepper, or extra spices as desired before serving.
Notes
- Use fresh onions, garlic, and canned goods with no added salts to improve flavor naturally.
- Drain excess grease after browning the beef to keep the soup light and flavorful.
- Simmer gently to blend flavors without overcooking beans or making corn mushy.
- Reserve some toppings like cilantro or cheese for garnishing right before serving.
- Customize with different beans, proteins, or spices to suit your preferences.
