Ingredients

Scale

Soup Base

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn kernels, drained
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 2 cups beef broth
  • 2 tbsp taco seasoning (blend of chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper)

Optional Toppings

  • Shredded cheddar cheese
  • Sour cream
  • Fresh cilantro, chopped
  • Sliced avocado
  • Lime wedges

Instructions

  1. Brown the Ground Beef: Heat a large pot over medium heat, add the ground beef, and cook until browned and crumbly. Drain any excess fat to keep the soup from being greasy.
  2. Sauté Onion and Garlic: Add diced onions and minced garlic to the cooked beef, stirring frequently until the onions are translucent and fragrant, about 3-5 minutes.
  3. Add Seasoning and Liquids: Sprinkle in your taco seasoning and stir to coat the beef mixture evenly. Pour in beef broth, diced tomatoes, and tomato sauce, then bring everything to a gentle boil.
  4. Stir in Beans and Corn: Drain and rinse the black beans and corn, then add them to the pot. Reduce heat and let the soup simmer for 15-20 minutes to meld flavors beautifully.
  5. Taste and Adjust: Give your soup a final stir, taste for seasoning, and add salt, pepper, or extra spices as desired before serving.

Notes

  • Use fresh onions, garlic, and canned goods with no added salts to improve flavor naturally.
  • Drain excess grease after browning the beef to keep the soup light and flavorful.
  • Simmer gently to blend flavors without overcooking beans or making corn mushy.
  • Reserve some toppings like cilantro or cheese for garnishing right before serving.
  • Customize with different beans, proteins, or spices to suit your preferences.
