Ingredients

Scale

Chicken and Produce

  • 1.5 to 2 pounds boneless, skinless chicken thighs
  • 1 to 1.5 cups pineapple chunks (fresh or canned, drained if canned)
  • 1 medium red bell pepper, chopped into bite-sized strips
  • 2 to 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
  • 2 green onions, thinly sliced (for garnish)

Sauce and Seasonings

  • 1/3 cup soy sauce (or tamari/gluten-free soy sauce)
  • 1/4 cup brown sugar
  • 1 tablespoon rice vinegar or apple cider vinegar

Instructions

  1. Prepare the ingredients: Trim and pat dry the chicken thighs to ensure they are ready for cooking. If using canned pineapple chunks, drain them well to avoid excess liquid. Chop the red bell pepper into bite-sized strips and mince the garlic and ginger for the sauce.
  2. Combine sauce ingredients: In a medium bowl, whisk together the soy sauce, brown sugar, minced garlic, grated ginger, and rice vinegar to create a sweet and tangy sauce that will infuse the chicken with tropical flavors.
  3. Layer the crockpot: Place the chicken thighs evenly at the bottom of the slow cooker. Next, spread the pineapple chunks and chopped red bell pepper on top of the chicken. Pour the prepared sauce evenly over all the ingredients, making sure the chicken is well coated.
  4. Cook low and slow: Cover the crockpot and cook on low heat for 4 to 6 hours, or until the chicken is fully cooked, tender, and infused with the sauce. The longer cooking time allows the flavors to meld beautifully.
  5. Garnish and serve: When cooking is complete, sprinkle the sliced green onions on top for a fresh, crisp flavor and vibrant color. Serve immediately with your preferred sides and enjoy.

Notes

  • Use chicken thighs for juicier, more tender meat compared to chicken breasts.
  • Fresh ginger adds brightness and balances the richness; don’t skip it.
  • Reserve some sauce before cooking to drizzle over the dish if extra moisture is needed when serving.
  • Adjust the sweetness by tasting the sauce beforehand; add more or less brown sugar to suit your preference.
  • Avoid opening the crockpot lid during cooking to maintain heat and moisture.
