Ingredients

Scale

Meatballs

  • 1/2 lb ground beef
  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs (or gluten-free breadcrumbs for GF option)
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1/4 cup milk or cream
  • 1 egg
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • Salt and pepper, to taste
  • Butter, for cooking

Gravy

  • 3 tbsp butter
  • 3 tbsp all-purpose flour (or gluten-free flour for GF option)
  • 2 cups beef broth
  • 1/2 cup sour cream or heavy cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Optional Seasonings and Variations

  • Fresh dill, thyme, or smoked paprika (for spice twist)
  • Splash of white wine or Dijon mustard (for gravy upgrade)

Instructions

  1. Prepare the Meatball Mixture: Combine ground beef and pork with finely chopped onions, minced garlic, breadcrumbs soaked in milk or cream, egg, salt, pepper, nutmeg, and allspice. Mix gently until just combined to keep the meatballs tender.
  2. Shape the Meatballs: Form the mixture into small, even meatballs about 1 inch in diameter. Using a kitchen scoop can help maintain uniform size for even cooking.
  3. Brown the Meatballs: Heat butter in a skillet over medium heat. Cook the meatballs in batches, turning frequently until golden-brown on all sides. This seals in juices and adds flavor.
  4. Make the Gravy: In the same pan, melt butter and whisk in flour to make a roux. Cook briefly until lightly golden. Gradually whisk in beef broth, stirring constantly until the sauce thickens and is smooth.
  5. Finish the Gravy and Combine: Stir in sour cream or heavy cream to enrich the sauce. Return the browned meatballs to the pan, cover, and simmer gently for 10 to 15 minutes, allowing the meatballs to finish cooking and absorb the gravy flavors.

Notes

  • Use a meat thermometer to ensure meatballs reach 160°F for safe and juicy results.
  • Do not overmix the meat mixture to avoid toughness; handle gently.
  • Brown meatballs in batches to prevent overcrowding and ensure a good crust.
  • Simmer gravy slowly for a thick, silky texture and full flavor development.
  • Add freshly chopped parsley just before serving for color and freshness.
