Ingredients

Scale

Beef Filling

  • 1 lb ground beef
  • 12 tbsp seasoning mix (cumin, chili powder, garlic powder, onion powder)
  • 2 tbsp water (for simmering)

Other Filling Ingredients

  • 1 cup refried beans
  • 1 cup Mexican rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa or pico de gallo
  • 1/4 cup sour cream (optional)

Wrap

  • 46 flour tortillas

Instructions

  1. Prepare the Beef Filling: Cook the ground beef in a skillet over medium heat until browned and crumbly. Drain any excess fat, then stir in the seasoning mix and water. Let it simmer until the mixture is thick and flavorful.
  2. Warm the Refried Beans and Mexican Rice: Heat the refried beans and Mexican rice separately, either on the stove or in the microwave, until warm and easy to scoop.
  3. Soften Tortillas: Wrap the flour tortillas in a damp paper towel and microwave for about 20 seconds to make them pliable and easy to roll without cracking.
  4. Assemble the Burritos: Lay a warm tortilla flat on a clean surface. Layer refried beans, seasoned beef, Mexican rice, shredded cheddar cheese, and a spoonful of salsa evenly in the center. Add a dollop of sour cream if desired.
  5. Roll It Up: Fold the sides of the tortilla inward, then roll tightly from one end to the other, ensuring all fillings stay inside for a perfectly stuffed burrito.
  6. Optional Toasting: For a crispy outside, place the assembled burrito on a hot skillet or panini press for 2-3 minutes until golden brown and the cheese is melted.

Notes

  • Season well: Allow spices to mingle with the beef for deeper flavor.
  • Don’t overfill: Keep the filling balanced to prevent tearing the tortilla.
  • Warm everything: Ensures optimal melting of the cheese and flavor fusion.
  • Use fresh tortillas: Fresher tortillas are more flexible and less likely to crack.
  • Customize beans: Spice refried beans with cumin or garlic powder for added depth.
