  • ½ cup shredded cheddar or Monterey Jack cheese
  • ½ cup salsa or pico de gallo
  • ¼ cup Greek yogurt or sour cream

Instructions

  1. Prepare the chicken: Season chicken breasts generously with southwestern seasoning. Let rest for 10 minutes to allow flavors to soak in. Grill or pan-sear over medium-high heat until cooked through and slightly charred, about 5-7 minutes per side.
  2. Chop the vegetables: While chicken cooks, dice bell peppers and slice avocado. Rinse and drain black beans and corn. Finely chop lettuce or spinach for even layering.
  3. Warm the tortillas: Gently warm flour tortillas in a dry skillet or microwave until soft and flexible to prevent cracking during rolling.
  4. Assemble the wrap: Layer warm tortilla with shredded lettuce, black beans, corn, chopped bell peppers, sliced chicken, cheese, avocado, salsa, and Greek yogurt. Avoid overfilling to keep the wrap intact.
  5. Roll and serve: Fold sides inward and roll tightly from one end to the other. Slice in half to show the colorful filling. Serve immediately or wrap to take on the go.
