Ingredients

Scale

Dough Ingredients

  • 2 1/4 teaspoons active dry yeast (one packet)
  • 1 cup warm milk (about 110°F / 43°C)
  • 2 tablespoons granulated sugar
  • 3 cups all-purpose flour (or 1 1/2 cups all-purpose + 1 1/2 cups whole wheat flour for variation)
  • 1 teaspoon salt
  • 1 large egg
  • 1 cup cottage cheese
  • 3 tablespoons unsalted butter, softened (for dough)

Garlic Butter Topping

  • 4 tablespoons unsalted butter, melted
  • 3 cloves fresh garlic, finely minced
  • Pinch of salt

Instructions

  1. Preparing the Dough: Warm the milk to about 110°F (43°C). Stir in sugar and active dry yeast, then let it sit for 5 to 10 minutes until frothy to activate the yeast.
  2. Mixing the Ingredients: In a large bowl, combine the activated yeast mixture, flour, salt, egg, and cottage cheese. Add the softened butter and knead for about 8 to 10 minutes until the dough is smooth, elastic, and slightly tacky but not sticky.
  3. First Rise: Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 to 1.5 hours until it doubles in size. This slow rise helps develop fluffiness.
  4. Shaping the Rolls: Punch down the dough and divide into equal portions. Roll each portion into a ball and arrange them spaced slightly apart in a greased baking dish.
  5. Second Rise: Cover the rolls loosely and let them rise for 30 to 45 minutes until puffy and nearly doubled in size.
  6. Preparing Garlic Butter: Melt the butter and stir in the minced garlic and a pinch of salt. This mixture will be brushed over the rolls before and after baking.
  7. Baking: Brush half of the garlic butter over the risen rolls. Bake at 375°F (190°C) for 20 to 25 minutes, until golden brown and cooked through. Immediately after baking, brush the remaining garlic butter over the hot rolls for a rich, glossy finish.

Notes

  • Use room temperature ingredients for even mixing and rising.
  • Do not over-knead; knead enough to develop gluten but keep rolls tender.
  • Adjust flour slightly if dough feels too sticky due to cottage cheese moisture.
  • Ensure milk is warm, not hot, to activate yeast properly.
  • Brush garlic butter twice for maximum flavor and beautiful appearance.
