Ingredients

Scale

Shrimp and Seafood

  • 1 pound peeled and deveined shrimp

Vegetables and Aromatics

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup diced bell peppers (any color)
  • 1 (14.5 oz) can diced tomatoes (or 1 ½ cups fresh diced tomatoes)
  • 1 (15 oz) can black beans or pinto beans, rinsed and drained
  • 1 lime, juiced
  • ¼ cup fresh cilantro, chopped

Liquids

  • 4 cups chicken or vegetable broth

Spices

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano

Optional Garnishes

  • Sour cream or Greek yogurt
  • Sliced avocado
  • Shredded cheese
  • Crunchy tortilla strips

Instructions

  1. Sauté Aromatics: Heat 1-2 tablespoons of oil in a large pot over medium heat. Add the finely chopped onions and minced garlic. Cook until fragrant and translucent, about 3-4 minutes, forming a flavorful base for the soup.
  2. Add Bell Peppers and Spices: Stir in the diced bell peppers along with chili powder, cumin, smoked paprika, and oregano. Cook for 1-2 minutes, allowing the spices to toast slightly and release their essential oils.
  3. Pour in Liquids and Beans: Add diced tomatoes and chicken or vegetable broth to the pot. Stir in the rinsed black or pinto beans. Bring the mixture to a simmer and let it cook gently for about 10 minutes to meld flavors.
  4. Cook the Shrimp: Add the peeled and deveined shrimp to the simmering soup. Cook gently for 3-5 minutes until the shrimp turn pink and opaque, taking care not to overcook.
  5. Finish with Fresh Ingredients: Remove the pot from heat. Squeeze in fresh lime juice to brighten the soup, and sprinkle chopped cilantro on top just before serving to add fresh herbal notes and color.

Notes

  • Don’t overcook shrimp: Add shrimp last and remove from heat as soon as they turn pink to keep them juicy.
  • Spice control: Adjust chili powder and optional jalapeños based on your preferred heat level.
  • Use fresh lime juice for a brighter, fresher flavor than bottled lime juice.
  • Choose a high-quality broth to enhance the soup’s depth and overall taste.
  • Simmer gently after adding shrimp to maintain tender texture.
  • This soup is naturally gluten free, but confirm your broth and spice blends to ensure no gluten additives.
  • For freezing, omit shrimp and add freshly cooked shrimp when reheating to preserve texture.
