Instructions

  1. Prepare the Lentils: Rinse the lentils under cold water until the water runs clear. In a pot, combine the lentils and chicken broth and bring to a gentle boil. Reduce the heat and simmer uncovered for 20-25 minutes until the lentils are just tender but not mushy. Drain any excess liquid and set lentils aside.
  2. Render the Schmaltz and Brown Chicken: Heat the chicken schmaltz in a large skillet over medium heat. Add the seasoned chicken thighs and brown them thoroughly on both sides. This seals in the juices and creates a flavorful base. Remove the chicken from the skillet and set aside.
  3. Sauté Aromatics: In the same skillet with the remaining schmaltz, sauté the finely chopped onions and minced garlic until golden and fragrant, about 3-5 minutes.
  4. Combine Lentils, Chicken, and Olives: Return the browned chicken thighs to the skillet along with the cooked lentils and sliced Kalamata olives. Stir gently to combine and warm through, allowing flavors to meld for 5-7 minutes.
  5. Add Lemon and Herbs: Stir in the fresh lemon juice, lemon zest, and chopped parsley or thyme. Adjust seasoning with salt and pepper to taste, balancing the bright and savory elements perfectly.
