Instructions

  3. Add Broth and Simmer: Pour in chicken broth and bring the mixture to a simmer. Cover and cook for 10-15 minutes until sweet potatoes are tender when pierced with a fork.
  4. Stir in Tortellini and Spinach: Add cheese tortellini and fresh spinach leaves to the simmering soup, stirring gently. Cook for 5 more minutes until tortellini are tender and spinach has wilted.
  5. Return Sausage and Season: Return the browned sausage to the pot. Stir well and season with salt, pepper, and Italian herbs. Taste and adjust seasonings as needed before serving.
