Ingredients

Scale

For the Patties

  • 1 lb ground beef (80/20)
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Freshly ground black pepper, to taste

For the Mushroom Gravy

  • 2 tablespoons butter or oil (plus more if needed)
  • 1 cup sliced mushrooms
  • 1/4 cup chopped onion
  • 2 tablespoons all-purpose flour or cornstarch (for gluten-free)
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Patties: In a large bowl, combine ground beef, breadcrumbs, egg, finely chopped onion, salt, pepper, and garlic powder. Mix gently until just combined, being careful not to overwork the mixture. Shape into oval patties about half an inch thick and set aside.
  2. Brown the Patties: Heat butter or oil in a large skillet over medium-high heat. Add the patties in a single layer and sear for 3-4 minutes per side, until a deep brown crust forms. Remove the patties from the skillet and set aside.
  3. Make the Mushroom Gravy: In the same skillet, add more butter if necessary and sauté the sliced mushrooms and chopped onions until soft and fragrant. Sprinkle flour over the mixture and stir well to coat. Cook for about one minute to remove the raw flour taste.
  4. Add Liquids and Simmer: Gradually whisk in beef broth and Worcestershire sauce, stirring continuously until the gravy thickens. Return the browned patties to the skillet, cover, and simmer gently for 10-15 minutes to allow the flavors to meld and the patties to absorb the gravy.
  5. Final Touch and Serve: Taste the gravy and adjust seasoning with salt and pepper if needed. Serve the patties hot, generously smothered with mushroom gravy.

Notes

  • Don’t overmix the beef mixture to keep patties tender and juicy.
  • Pat the patties dry before searing to achieve a better crust.
  • Use fresh mushrooms for enhanced texture and flavor instead of canned.
  • Simmer gently to avoid toughening the meat.
  • Let the patties rest a few minutes after cooking to retain juices.
