Instructions

  1. Prepare the Dough: Activate the yeast by mixing it with the warm water and a pinch of sugar. Let it bubble for about 5 minutes. In a large bowl, combine the flour, salt, and freshly chopped rosemary. Add the yeast mixture and olive oil, kneading until a smooth, elastic dough forms. Cover and let it rise until doubled in size, about 1 to 1.5 hours.
  2. Prepare the Garlic Butter: Melt the butter gently in a small saucepan. Add the finely minced garlic and simmer gently without browning to infuse the butter. Stir in additional chopped rosemary for added flavor.
  3. Shape the Bread: Punch down the risen dough and roll it out into a rectangle. Cut into small squares, then brush each piece generously with the garlic rosemary butter. Stack or arrange the pieces in a baking pan, adding more garlic butter between layers. Optionally sprinkle Parmesan cheese or add shredded cheese between layers for a cheesy twist.
  4. Final Rise and Bake: Cover the assembled dough and let it rise again for about 30 minutes. Preheat oven to 375°F (190°C). Bake the bread for 25–30 minutes until golden brown and cooked through. Let cool slightly before serving.
