Peach Blackberry Cobbler

Peach Blackberry Cobbler

Peach Blackberry Cobbler is a classic Southern dessert that perfectly balances the natural sweetness of ripe peaches with the tartness of fresh blackberries. This warm, comforting cobbler features a golden, flaky biscuit-like crust and a bubbling, syrupy fruit filling, making it an ideal summer treat for family gatherings, picnics, or cozy evenings.

Ingredients

Scale

Fruit Filling

  • 4 to 5 ripe peaches, peeled and sliced (about 4 cups)
  • 2 cups fresh blackberries
  • 3/4 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)

Cobbler Topping

  • 1 cup all-purpose flour (or gluten-free flour blend for gluten-free version)
  • 1/3 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small cubes (or plant-based butter for vegan option)
  • 1/2 cup milk or buttermilk (or non-dairy milk alternative)

Instructions

  1. Prepare the Fruit Filling: Peel and slice the peaches and place them in a large bowl. Add the blackberries, sugar, lemon juice, and optional cinnamon and nutmeg. Gently toss the fruit to coat evenly and set aside to allow the juices to meld.
  2. Make the Cobbler Topping: In another bowl, whisk together the flour, sugar, baking powder, salt, and optional spices. Add the cold butter cubes and use your fingers or a pastry cutter to blend the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Combine and Layer: Grease a baking dish and pour the fruit mixture evenly into it. Pour the milk or buttermilk into the topping mixture and stir gently just until combined. Spoon dollops of the topping over the fruit, covering most of the surface but leaving some fruit visible for a rustic appearance.
  4. Bake Until Golden: Preheat the oven to 375°F (190°C). Bake the cobbler for 40 to 45 minutes, or until the topping is puffed and golden brown and the fruit filling is bubbling around the edges.

Notes

  • Use fresh, ripe peaches and blackberries for the best flavor and texture.
  • Do not overmix the topping to ensure a tender and flaky crust.
  • Keep the butter cold before mixing to create a crispy, flaky crust.
  • Remove the cobbler from the oven as soon as the crust is golden and the filling is bubbling to avoid dryness.
  • Let the cobbler rest for a few minutes after baking so the filling thickens and flavors meld perfectly.
