Instructions

  1. Prepare the Crust: Crush about 24 Oreo cookies into fine crumbs and mix with 6 tablespoons of melted butter until well combined. Press this mixture firmly into the bottom of a springform pan to form an even crust layer, then chill in the fridge to set.
  2. Make the Filling: Beat 24 oz softened cream cheese and 1 cup granulated sugar until smooth and creamy. Add 3 eggs one at a time, mixing thoroughly after each addition. Fold in 1 cup sour cream, 1 tablespoon vanilla extract, and roughly chopped Oreo pieces for texture. Finally, whip in 1 cup heavy cream until the batter is silky.
  3. Assemble and Bake: Pour the cheesecake filling over the chilled crust, smoothing the top gently. Bake in a preheated oven at 325°F (160°C) for about 50-60 minutes until the edges are set but the center still slightly jiggles. This ensures a creamy texture once chilled.
  4. Cool and Chill: Allow the cheesecake to cool at room temperature for about an hour before covering and refrigerating for at least 4 hours or overnight. This resting time is crucial for flavors to meld and texture to firm up perfectly.
