  • 2 cups fresh spinach or kale, chopped

  • 2 bay leaves

Instructions

  1. Step 1: Sauté aromatics and vegetables

    Heat olive oil in a large pot over medium heat. Add diced onion, minced garlic, chopped carrots, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables are softened and fragrant.

  2. Step 2: Add lentils and liquids

    Add the chopped spinach or kale to the soup and cook for an additional 5 minutes until the greens wilt. Taste and adjust seasoning as needed, then remove bay leaves before serving.
