Instructions

  1. Prepare the crust: Mix almond flour with melted butter or coconut oil and a pinch of natural sweetener. Press this mixture firmly into a pie dish to form a compact crust. Chill in the fridge to set while preparing the filling.
  2. Make the lemon filling: In a bowl, blend softened cream cheese, Greek yogurt, fresh lemon juice, and lemon zest until silky smooth. Gradually add your preferred natural sweetener and mix well to balance the tartness.
