Muffin Batter

  • 1 ¾ cups all-purpose flour

  • ½ teaspoon almond extract (optional)

Frangipane Filling

  • 6 tablespoons butter, softened
  • ½ cup sugar
  • ¾ cup almond flour or ground almonds
  • 1 large egg, beaten
  • ½ teaspoon almond extract (optional)

For Garnish (optional)

  • Powdered sugar for dusting
  • Slivered almonds
  • Honey drizzle

Instructions

  1. Prepare the frangipane filling: In a bowl, cream together the softened butter and sugar until light and fluffy. Add almond flour, one beaten egg, and a splash of almond extract if using. Mix until smooth and set aside.
  2. Make the muffin batter: In one bowl, combine the flour and baking powder. In another, whisk eggs, sugar, melted butter, milk, vanilla extract, and almond extract if using. Gradually incorporate the dry ingredients into the wet until just combined, taking care not to overmix.
  3. Assemble the muffins: Fill each muffin cup halfway with the batter. Spoon a generous amount of frangipane filling into the center of each cup, then cover with more batter until nearly full.
  4. Bake: Preheat oven to 350°F (175°C). Bake the muffins for 20 to 25 minutes or until golden and a toothpick inserted into the muffin portion (avoiding the frangipane center) comes out clean.
  5. Cool and garnish: Let muffins cool in the pan for 5 to 10 minutes before transferring to a wire rack. Dust with powdered sugar and optionally top with slivered almonds or drizzle honey before serving.
