Ingredients

Scale

Main Ingredients

  • 1 medium cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Tahini-Honey Sauce

  • 1/4 cup tahini
  • 2 tablespoons honey
  • 2 tablespoons fresh lemon juice
  • 24 tablespoons warm water (to thin sauce)
  • Pinch of salt

Garnish (Optional)

  • Fresh parsley, chopped
  • Toasted sesame seeds (optional)

Instructions

  1. Prepare the Cauliflower: Wash the cauliflower and cut it into evenly sized florets to ensure uniform roasting. Pat them dry thoroughly to help the oil and spices adhere and to promote crispness during roasting.
  2. Season the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, ground cumin, smoked paprika, cinnamon, garlic powder, salt, and pepper. Make sure each floret is evenly coated with the spice mixture to infuse Moroccan-inspired flavors.
  3. Roast the Cauliflower: Arrange the seasoned florets in a single layer on a baking sheet. Roast in a preheated oven at 425°F (220°C) for 25-30 minutes, turning halfway through cooking. The cauliflower should be golden, tender, and have crisp edges.
  4. Make the Tahini-Honey Sauce: While the cauliflower is roasting, whisk together tahini, honey, lemon juice, a pinch of salt, and warm water (start with 2 tablespoons and add more as needed) until the sauce is smooth and has a drizzling consistency.
  5. Combine and Serve: Once the cauliflower is roasted and golden, transfer it to a serving dish. Drizzle generously with the tahini-honey sauce and garnish with chopped fresh parsley and toasted sesame seeds if desired. Serve warm or at room temperature.

Notes

  • Cut cauliflower florets uniformly for even roasting and crispness.
  • Dry florets thoroughly before seasoning to prevent steaming and ensure crisp edges.
  • Adjust the tahini-honey sauce consistency by adding warm water gradually to get the perfect drizzle.
  • Use freshly ground spices for the most intense and vibrant flavors.
  • Slightly warming the tahini-honey sauce before serving helps meld the flavors and eases pouring.
