  • 2 green onions, chopped

Instructions

  1. Prepare the seasoned beef: In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Stir in taco seasoning and a splash of water, then simmer until the beef absorbs the flavors and is fully cooked.
  2. Fry the tortillas: Heat vegetable oil in a shallow pan. Fry each tortilla for about 1-2 minutes on each side until golden and crisp but not greasy. Drain on paper towels to remove excess oil.
  3. Assemble the first layer: Place one fried tortilla on a baking sheet. Spread a generous layer of refried beans evenly over the tortilla, followed by half of the seasoned beef and a handful of shredded cheese.
  4. Add the second tortilla and toppings: Carefully place another fried tortilla on top. Spread enchilada sauce over it, then sprinkle diced tomatoes, sliced olives, green onions, and remaining cheese evenly over the surface.
  5. Bake to melt and meld: Preheat your oven to 375°F (190°C). Place the assembled Mexican Pizza in the oven and bake for 10-12 minutes or until the cheese is melted and bubbly.
