Instructions

  1. Prepare the dough: Cream the softened butter and icing sugar together until pale, light, and fluffy. Sift in the cornflour and plain flour (or gluten-free flour blend) and gently fold the mixture with a spatula or your hands to form a soft dough. Avoid overmixing to keep cookies tender.
  2. Shape your cookies: Roll the dough into walnut-sized balls and place them on a baking tray lined with parchment paper. Flatten each ball slightly with your palm or the back of a fork, leaving space between cookies for spreading.
  3. Bake to perfection: Preheat the oven to 160°C (320°F). Bake the cookies for 15-18 minutes until they are set but still pale and soft. Watch the edges to ensure they do not brown too much.
  4. Cool and assemble: Allow cookies to cool completely on the tray before transferring to a wire rack. Sandwich two cookies with buttercream or jam filling if desired.
