  • 1/4 cup fresh parsley, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1/2 cup panko breadcrumbs (use gluten-free crumbs or crushed nuts for gluten-free option)
  • 1 large egg
  • 1/4 cup red onion, finely minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil (for cooking)

Instructions

  1. Prepare the Salmon: If using fresh salmon, bake or pan-sear until it flakes easily with a fork. If canned, drain well and remove any large bones before flaking.
  2. Mix the Ingredients: In a large bowl, gently combine the flaked salmon, minced red onion, garlic, chopped parsley, lemon zest, lemon juice, panko breadcrumbs, egg, ground cumin, salt, and pepper until evenly mixed but not overworked.
  3. Form the Patties: With chilled or wet hands, shape the mixture into 6 to 8 patties about 3 inches wide and 1/2 inch thick. Place patties on a plate or tray.
  4. Cook the Patties: Heat extra virgin olive oil in a nonstick skillet over medium heat. Cook each patty 3 to 4 minutes per side until golden brown and cooked through. Flip carefully to maintain shape.

  • Use cold or wet hands for easier patty shaping and less stickiness.
