This make-ahead, versatile cheesecake features a buttery graham cracker crust and is easily adaptable for various dietary preferences including gluten-free and vegan options.

Ingredients

Scale

For the Graham Cracker Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Cheesecake Base

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar

For the Lime Mousse

  • 1 cup heavy whipping cream
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest (from about 2 limes)
  • 1 teaspoon gelatin powder
  • 2 tablespoons cold water

Instructions

  1. Prepare the Crust: Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture firmly into the bottom of a springform pan, creating an even layer. Refrigerate for about 15 minutes to set while preparing the filling.
  2. Make the Cheesecake Base: In a large bowl, beat the softened cream cheese with sugar until smooth and creamy to remove any lumps, creating a silky base for the mousse topping.
  3. Prepare the Lime Mousse: Soften gelatin in cold water for a few minutes, then gently warm until fully dissolved. Whip the heavy cream to soft peaks, then fold it into the cream cheese mixture along with fresh lime juice and lime zest. Carefully fold in the dissolved gelatin, combining gently to maintain the mousse’s airy texture.
  4. Assemble and Chill: Pour the lime mousse over the chilled crust and smooth the surface. Cover the pan with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the mousse cheesecake to set fully and develop flavor.

Notes

  • Use fresh limes for the brightest and most vibrant citrus flavor.
  • Ensure cream cheese is softened to room temperature for smooth blending without lumps.
  • Whip cream only to soft peaks to achieve the ideal mousse texture.
  • A springform pan is recommended for easy removal and clean edges.
  • Allow adequate chilling time to properly set the mousse and enhance texture.
