Instructions

  1. Prepare the Dough: Warm the milk until just warm to the touch (about 110°F / 43°C). In a small bowl, mix the warm milk with 1 teaspoon sugar and active dry yeast. Let it sit until bubbly and frothy, about 5-10 minutes. In a large bowl, combine the flour, remaining sugar, salt, lemon zest, softened butter, eggs, and the yeast mixture. Stir until a soft dough forms. Knead gently for about 8-10 minutes until smooth and elastic. Cover the dough and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
  2. Roll Out and Add Filling: Once the dough has risen, turn it out onto a lightly floured surface. Roll into a large rectangle approximately 12 by 16 inches. Spread the softened butter evenly over the dough surface. Sprinkle fresh blueberries evenly on top and gently squeeze lemon juice over the blueberries for added zest. Carefully roll the dough tightly from the long side into a log.
  3. Cut and Arrange Rolls: Slice the rolled dough into even 1.5-inch thick pieces. Place each piece cut-side up into a greased baking dish, leaving slight space between rolls. Cover the dish and let the rolls proof for another 30 minutes until puffed and cozy.
