Chocolate Mousse Layer

  • 4 oz (113g) good quality dark chocolate
  • 1 cup (240ml) heavy cream
  • 1/4 cup (30g) powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Brownie Base: Melt the dark chocolate and unsalted butter together until smooth. Whisk in granulated sugar, then add eggs one at a time, mixing well after each addition. Stir in vanilla extract. Sift cocoa powder, flour, and a pinch of salt into the wet mixture and fold gently until just combined. Pour the batter into a parchment-lined baking tray and bake at 350°F (175°C) for 20-25 minutes, until a toothpick inserted near the center comes out with moist crumbs. Let the brownies cool completely.
  2. Make the Chocolate Mousse: Chill a clean mixing bowl and beaters in the refrigerator for 15 minutes. Heat dark chocolate over a double boiler until melted and smooth, then let cool slightly. In the chilled bowl, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
