Ingredients

Scale

Meat and Aromatics

  • 1 pound ground beef or Italian sausage
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced

Tomato Base and Broth

  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups chicken or beef broth

Pasta and Seasonings

  • 6 ounces broken lasagna noodles
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Cheese and Garnishes

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley, chopped, for garnish

Instructions

  1. Sauté the Aromatics and Meat: Heat a large pot over medium heat. Add the ground beef or Italian sausage and break it up while cooking until browned. Add finely chopped onions and minced garlic; cook until softened and fragrant.
  2. Build the Soup Base: Stir in the diced tomatoes, tomato sauce, and broth. Season with Italian seasoning, salt, and pepper. Bring the mixture to a gentle boil to meld the flavors together.
  3. Add the Pasta: Break the lasagna noodles into bite-sized pieces and add to the simmering soup. Cook for 8 to 10 minutes, until the noodles are tender but not mushy.
  4. Incorporate the Cheese: Turn off the heat and swirl in dollops of ricotta cheese for creaminess. Sprinkle shredded mozzarella on top and allow it to melt slightly.
  5. Garnish and Serve: Finish with fresh chopped basil or parsley for a burst of fresh flavor and color. Ladle the soup into bowls and serve immediately.

Notes

  • Brown the Meat Well: Proper browning adds a deeper flavor foundation for the soup.
  • Don’t Overcook Pasta: Adding noodles at the end and timing carefully keeps them tender but intact.
  • Use Fresh Herbs: Fresh basil or parsley adds a refreshing lift that dried herbs can’t match.
  • Swirl Cheese Last: Adding ricotta when the soup is off heat preserves its creamy texture without melting it completely away.
  • Adjust Consistency: Add more broth if you prefer a soupier texture, or reduce it by simmering longer for a thicker stew-like feel.
