Ingredients

Scale

Protein

  • 4 chicken thighs or breasts (about 1.5 lbs)

Vegetables

  • 1.5 lbs baby potatoes, halved
  • 12 oz fresh green beans, trimmed

Seasonings & Oils

  • 3 tbsp olive oil
  • 3 garlic cloves, freshly minced
  • 1 tsp dried Italian herbs (oregano, basil, thyme blend)
  • Salt and freshly ground black pepper, to taste
  • Zest of 1 lemon or 1 tbsp fresh lemon juice
  • Optional: 1/4 tsp red pepper flakes

Instructions

  1. Prep the Ingredients: Wash and halve the baby potatoes for even roasting. Trim the ends of the green beans. Pat the chicken pieces dry with paper towels to promote crisp skin. Mince the garlic and zest the lemon to have all ingredients prepared.
  2. Season the Chicken and Vegetables: In a large mixing bowl, combine the chicken, halved potatoes, and green beans. Drizzle with olive oil and add minced garlic, dried Italian herbs, salt, pepper, and optional red pepper flakes. Toss thoroughly to coat everything evenly.
  3. Arrange on a Baking Sheet: Spread the seasoned chicken and vegetables in a single layer on a rimmed baking sheet. Make sure pieces have space to roast rather than steam for optimal crispness.
  4. Roast in the Oven: Preheat the oven to 425°F (220°C). Bake the tray for 30–35 minutes, tossing the potatoes and green beans halfway through to ensure even cooking and browning. Verify the chicken reaches an internal temperature of 165°F (74°C) before removing from the oven.
  5. Finish with Lemon: Once roasted, sprinkle lemon zest or squeeze fresh lemon juice over the hot chicken and vegetables to brighten the flavors before serving.

Notes

  • Choose baby potatoes of uniform size to ensure even cooking.
  • Dry chicken thoroughly for crispier skin.
  • Use fresh herbs at the end if available to boost aroma.
  • Avoid crowding the pan to allow air circulation and better roasting.
  • Let chicken rest 5 minutes after roasting for juicy meat.
