Ingredients

Scale

Main Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup grated Parmesan cheese
  • 1 tablespoon fresh rosemary, finely chopped
  • ¼ teaspoon salt
  • 6 tablespoons cold butter, cut into small pieces
  • 34 tablespoons cold water

Optional Toppings

  • 1 tablespoon extra virgin olive oil or melted butter (for brushing)
  • Sea salt, for sprinkling
  • Optional seeds: sesame, poppy, or flax seeds (for sprinkling)
  • Optional spices: pinch of red pepper flakes

Instructions

  1. Prepare the dough: In a large bowl, combine all-purpose flour, grated Parmesan cheese, finely chopped fresh rosemary, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add cold water, mixing just until the dough comes together without becoming sticky.
  2. Roll out the dough: Place the dough between two sheets of parchment paper and roll it out as thin as possible—ideally about 1/8 inch or less. This thinness ensures the crackers will be perfectly crisp. Carefully remove the top layer of parchment after rolling.
  3. Cut and prepare for baking: Using a pizza cutter or sharp knife, slice the dough into your desired cracker shapes such as squares, rectangles, or triangles. Transfer the parchment sheet with the cut dough onto a baking tray. For added flavor and shine, brush lightly with olive oil or melted butter, then sprinkle with sea salt and any optional seeds or spices as desired.
  4. Bake to perfection: Preheat the oven to 350°F (175°C). Bake the crackers for 15-20 minutes, rotating the tray halfway through to ensure even browning. The crackers should be golden and crisp when done. Allow to cool, then break apart any connected pieces.

Notes

  • Chill the dough for at least 30 minutes before rolling for easier handling and to prevent shrinking.
  • Roll the dough as thin and evenly as possible for the crispiest crackers.
  • Watch the oven closely to avoid overbrowning or burning.
  • Use fresh rosemary rather than dried for best flavor and aroma.
  • Store crackers in an airtight container at room temperature to keep them crisp for up to a week.
  • To refresh crackers, reheat in a 300°F (150°C) oven for about 5 minutes.
