Ingredients

Scale

Base Ingredients

  • 2 cups whole milk
  • 3 large egg yolks
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup eggnog

Flavorings & Spices

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon

Optional

  • 12 tablespoons rum or bourbon (for adult version)

Instructions

  1. Whisk Egg Yolks and Sugar: In a medium bowl, vigorously whisk together the egg yolks and sugar until the mixture becomes pale and thick, creating the ideal base for the pudding’s custard texture.
  2. Combine Milk, Eggnog, and Spices: Pour the whole milk, eggnog, ground nutmeg, and ground cinnamon into a saucepan. Warm gently over medium heat until steaming but not boiling.
  3. Temper the Egg Mixture: Slowly add a few spoonfuls of the warm milk mixture into the egg yolk bowl while whisking constantly to gradually raise the temperature without scrambling the eggs.
  4. Cook the Pudding: Return the tempered egg mixture to the saucepan. Add the cornstarch and stir frequently, cooking until the pudding thickens, about 5-7 minutes.
  5. Add Vanilla and Chill: Remove from heat and stir in the vanilla extract. Optionally add rum or bourbon for the adult version. Transfer pudding to serving dishes, cover surface with plastic wrap to prevent a skin, and chill for at least 2 hours before serving.

Notes

  • Use freshly grated nutmeg for a brighter, more aromatic flavor.
  • Keeps the heat moderate to prevent curdling and ensure a silky smooth texture.
  • Stir constantly during cooking to avoid lumps and scorching.
  • Press plastic wrap directly on the pudding’s surface while chilling to prevent skin formation.
  • Taste the pudding before chilling and adjust sugar levels to preference.
