For the Dough
- 3 ½ cups all-purpose flour (or gluten-free bread flour blend for gluten-free option)
- 2 ¼ teaspoons active dry yeast (1 packet)
- 1 ¼ cups warm water (about 110°F/43°C)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 tablespoon sugar
For the Herb & Garlic Filling
- 3–4 garlic cloves, finely minced
- 2 tablespoons fresh herbs (parsley, rosemary, thyme or preferred mix), finely chopped
- 2 tablespoons olive oil
- Pinch of salt
- Prepare the Dough: Dissolve the yeast and sugar in warm water and let it activate until bubbly and frothy, about 5 to 10 minutes. In a large bowl, combine the flour and salt, then slowly add the yeast mixture along with olive oil. Mix until a soft dough forms.
- Knead the Dough: Turn the dough onto a floured surface and knead for about 8 to 10 minutes until smooth and elastic, ensuring the rolls have the perfect soft texture after baking.
- Let the Dough Rise: Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm spot until doubled in size, approximately 1 to 1.5 hours.
- Prepare the Herb & Garlic Filling: While the dough is rising, mix together minced garlic, finely chopped fresh herbs, olive oil, and a pinch of salt to create the flavorful swirl inside the rolls.
- Roll Out and Spread Filling: Punch down the risen dough and roll it out into a large rectangle. Evenly spread the herb and garlic mixture over the dough, covering every corner.
- Create the Swirls: Tightly roll the dough up from one long edge, then slice it into even segments. Arrange these spirals cut side up in a greased baking dish to prepare for the final rise.
- Final Rise and Bake: Allow the rolls to rise once more for about 30 minutes. Preheat the oven to 375°F (190°C) and bake the rolls for 20 to 25 minutes, until golden brown and fragrant. Optionally, brush tops with olive oil after baking for shine and extra flavor.
Notes
- Use fresh herbs for more vibrant and aromatic flavor.
- Do not overfill the dough with the herb mixture to prevent sogginess.
- Kneading properly is key to develop gluten for soft, structured rolls.
- Ensure proper rising times; under-risen dough results in dense rolls.
- Brush rolls with olive oil after baking for added shine and flavor.
