Ingredients

Scale

Shrimp and Pineapple

  • 1 lb large fresh shrimp, peeled and deveined
  • 1 medium ripe pineapple, cut into 1-inch chunks

Marinade

  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp honey or brown sugar
  • 1 tsp smoked paprika
  • 2 tbsp fresh lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Other

  • Wooden or metal skewers (if wooden, soak in water for 30 minutes prior to use)

Instructions

  1. Prepare the shrimp and pineapple: Rinse the shrimp under cold water, pat dry with paper towels, and set aside. Cut fresh pineapple into uniform 1-inch chunks to ensure even cooking alongside the shrimp.
  2. Make the marinade: In a medium bowl, whisk together olive oil, minced garlic, honey (or brown sugar), smoked paprika, lime juice, salt, and black pepper until fully combined.
  3. Marinate the shrimp: Add the peeled shrimp to the marinade and gently toss to coat evenly. Let them sit for 15 to 20 minutes to absorb the flavors. Avoid marinating longer to prevent the shrimp from becoming rubbery.
  4. Assemble the skewers: Alternate threading shrimp and pineapple chunks onto the skewers, arranging them snugly but without overcrowding to ensure even grilling and good char marks.
  5. Grill to perfection: Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking. Place the skewers on the grill and cook for 2 to 3 minutes per side, until the shrimp turn pink and opaque and the pineapple develops slight char marks.
  6. Serve and enjoy: Carefully remove the skewers from the grill and serve immediately while warm to enjoy the best taste and texture.

Notes

  • Keep shrimp cold and marinate just before grilling to maintain a firm texture.
  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
  • Preheat the grill thoroughly for perfect searing and to avoid shrimp sticking to the grates.
  • Remove shrimp from heat as soon as they become opaque to avoid overcooking and drying out.
  • Adjust the marinade’s sweetness and acidity to suit your personal taste preferences.
