Ingredients

Scale

For the Chicken Marinade

  • 1 lb chicken breasts or thighs
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill, chopped
  • Salt and pepper, to taste

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1 medium cucumber, grated and excess moisture squeezed out
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 2 tbsp fresh mint, chopped
  • Salt and pepper, to taste

For the Bowls

  • Cherry tomatoes, halved (about 1 cup)
  • 1 small red onion, thinly sliced
  • Cooked grain or greens (quinoa, rice, spinach, or preferred choice; about 2 cups cooked)
  • Fresh dill and mint, for garnish
  • Optional garnishes: crumbled feta cheese, extra virgin olive oil, za’atar or sumac

Instructions

  1. Prepare the Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, chopped dill, salt, and pepper. This simple mixture infuses the chicken with bright and herbaceous flavors, creating a flavorful base for the dish.
  2. Marinate the Chicken: Place chicken breasts or thighs into the marinade and coat thoroughly. Let them sit at room temperature for at least 15 minutes or refrigerate for up to 2 hours to deepen the flavor and ensure juicy, tender results.
  3. Make the Tzatziki Sauce: While the chicken marinates, grate the cucumber and squeeze out excess moisture. Mix the cucumber with Greek yogurt, minced garlic, lemon juice, chopped mint, salt, and pepper in a bowl. Chill the sauce to allow the flavors to meld.
  4. Cook the Chicken: Grill, pan-sear, or bake the marinated chicken until cooked through and nicely charred at the edges. Rest the chicken briefly, then slice into bite-sized pieces perfect for your bowl.
  5. Assemble Your Bowls: Start with a base of your chosen grain or greens, then layer on sliced chicken, fresh cherry tomatoes, red onion slices, and a generous dollop of tzatziki sauce. Finish with an extra sprinkle of fresh herbs for a vibrant, colorful presentation.

Notes

  • Marinate chicken longer (overnight) for juicier, more flavorful meat.
  • Remove excess moisture from cucumber to keep tzatziki thick and creamy.
  • Use fresh herbs generously to enhance authenticity and brightness.
  • Let cooked chicken rest to lock in juices and ensure tenderness.
  • Warm grains or greens before assembling to add contrast to the cool tzatziki.
