Instructions

  1. Prepare and Sear the Steak: Season the thinly sliced steak with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the steak quickly until browned but still juicy inside. Remove from skillet and set aside.
  2. Cook the Tortellini: Bring a large pot of salted water to a boil. Cook the cheese tortellini according to package instructions, about 3 to 5 minutes. Drain and reserve a little pasta water.
  3. Sauté the Garlic: In the same skillet, add more olive oil if needed. Add minced garlic and sauté over medium heat about 1 minute until fragrant but not browned.
  4. Make the Creamy Sauce: Pour in heavy cream or half and half, stirring to combine with garlic. Let simmer gently to thicken slightly, then stir in grated Parmesan cheese.
  5. Combine Everything: Return steak slices and cooked tortellini to skillet. Toss gently to coat with the creamy garlic sauce. Add reserved pasta water a tablespoon at a time if sauce is too thick.
  6. Finish with Fresh Herbs and Season: Turn off heat. Sprinkle chopped parsley or basil over the dish. Adjust seasoning with salt and pepper to taste. Serve hot.
