Ingredients

Scale

Chicken and Potatoes

  • 46 boneless chicken thighs
  • 1.5 pounds baby potatoes, washed and halved

Seasoning and Sauce

  • 4 garlic cloves, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 3 tablespoons olive oil
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • Salt, to taste
  • Black pepper, to taste

For Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prep Your Ingredients: Wash and halve the baby potatoes to ensure quicker and even roasting. Mince the garlic finely and grate the Parmesan cheese fresh for maximum flavor.
  2. Season the Chicken and Potatoes: In a large bowl, drizzle olive oil over the chicken thighs and halved potatoes. Add the minced garlic, grated Parmesan, dried Italian herbs, salt, and pepper. Toss everything well until every piece is evenly coated and ready to roast.
  3. Arrange and Roast: Spread the chicken and potatoes on a baking sheet in a single layer to allow even cooking. Roast in a preheated oven at 400°F (200°C) for 30 to 35 minutes, or until the chicken skin is golden and the potatoes are crisp.
  4. Broil for Extra Crispness: For a perfect crispy parmesan crust, switch your oven to broil for the last 3 to 5 minutes. Watch carefully to prevent burning while achieving a golden finish.
  5. Garnish and Serve: Remove from the oven and sprinkle freshly chopped parsley over the dish for added freshness and color. Serve hot.

Notes

  • Let chicken sit at room temperature for 15 minutes before cooking for more even roasting.
  • Use freshly grated Parmesan cheese for better texture and richer flavor.
  • Do not overcrowd the pan; give the chicken and potatoes space to crisp up properly.
  • Let the chicken rest for a few minutes after cooking to keep it juicy and tender.
  • Toss garlic with olive oil before mixing to evenly distribute the garlicky aroma.
