Shrimp Scampi Sauce
- 1 pound fresh shrimp, peeled and deveined
- 6 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- Salt and freshly ground black pepper, to taste
Lasagna and Cheese Layers
- 12 lasagna noodles
- 15 ounces ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
Optional Garnishes and Add-ins
- Additional grated Parmesan cheese for topping
- Fresh parsley, chopped, for garnish
- Optional: sautéed spinach, mushrooms, or zucchini (for vegetable boost)
- Optional: red pepper flakes or diced jalapeños (for spicy kick)
- Optional: splash of dry white wine (to add to sauce)
- Prepare the Shrimp and Garlic Butter Sauce: In a large skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add the peeled and deveined shrimp and sauté until just opaque and tender, about 2-3 minutes per side. Stir in fresh lemon juice, and season with salt and pepper. Remove shrimp from the pan and set aside, keeping the garlic butter sauce in the skillet.
- Cook the Lasagna Noodles: Bring a large pot of salted water to a boil. Add lasagna noodles and cook until al dente according to package instructions, about 8-10 minutes. Drain noodles and lay them flat on a clean towel to prevent sticking.
- Mix the Cheese Filling: In a bowl, combine ricotta cheese, grated Parmesan cheese, and chopped fresh parsley. Mix well to create a creamy, herbaceous filling.
- Assemble the Layers: Preheat oven to 375°F (190°C). In a baking dish, spread a thin layer of the garlic butter sauce on the bottom. Layer 3-4 lasagna noodles, spread some of the ricotta mixture evenly over the noodles, add an even layer of cooked shrimp, sprinkle shredded mozzarella cheese, and drizzle more garlic butter sauce on top. Repeat these layers until all ingredients are used, finishing with a generous layer of mozzarella and Parmesan cheese on top.
- Bake Until Golden and Bubbling: Place the assembled lasagna in the preheated oven and bake for 30-35 minutes, or until the top cheese is melted, golden brown, and the sauce is bubbling around the edges.
Notes
- Use fresh shrimp for best flavor and texture; if frozen, thaw completely and pat dry before cooking.
- Avoid overcooking shrimp to prevent tough, rubbery texture; cook until just pink and opaque.
- Be generous with garlic butter sauce to ensure the lasagna stays moist and flavorful.
- Let the lasagna rest for 10 minutes after baking to allow it to set and slice easily.
- Choose high-quality butter and cheeses for superior taste since the recipe relies on simple, fresh ingredients.
