Potatoes

  • 1 lb baby potatoes, washed and halved
  • 12 tbsp olive oil (for roasting)
  • Salt, to taste
  • Black pepper, to taste

Garlic Butter Sauce

  • 34 garlic cloves, freshly minced
  • 3 tbsp unsalted butter

Garnish

  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the potatoes: Wash and halve the baby potatoes to ensure even cooking. Toss them with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 20 minutes or until golden and crisp.
  2. Cook the beef bites: While the potatoes roast, heat a skillet over medium-high heat with a touch of olive oil. Season the beef bites with salt and pepper, then sear them in the skillet until nicely browned on all sides but still tender inside, approximately 3 to 4 minutes.
  3. Make the garlic butter sauce: Reduce the heat to medium-low and add unsalted butter along with the minced garlic to the skillet. Stir frequently as the butter melts and the garlic softens, cooking just until fragrant without browning to avoid bitterness.
  4. Combine and finish: Add the roasted potatoes back to the skillet with the beef and garlic butter sauce. Toss gently to evenly coat all ingredients in the garlic butter. Sprinkle freshly chopped parsley over the dish for a fresh finish and serve immediately.
