Ingredients

Scale

Meatloaf Base

  • 1 lb ground beef
  • 1 large sweet onion, thinly sliced
  • 1 packet French onion soup mix (about 1 oz)
  • 1 large egg
  • 3/4 cup bread crumbs (or gluten-free breadcrumbs)
  • 1/4 cup beef broth
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

For Caramelizing Onions

  • 2 tbsp butter

Topping

  • 1/2 cup Gruyere or Swiss cheese, shredded

Instructions

  1. Caramelize the Onions: Thinly slice the sweet onions. In a skillet over low heat, melt the butter and cook the onions slowly until they become soft, sweet, and golden brown, about 20-30 minutes. This process unlocks the signature French onion flavor.
  2. Mix the Meatloaf Ingredients: In a large bowl, combine ground beef, caramelized onions (reserve a small amount for topping), egg, breadcrumbs, French onion soup mix, beef broth, minced garlic, salt, and pepper. Gently stir to blend everything without overmixing to keep the meatloaf tender.
  3. Shape and Prepare for Baking: Transfer the meat mixture onto a lined or greased loaf pan or baking sheet. Shape it into a loaf form and smooth the top, preparing the surface for the toppings.
  4. Add the Toppings: Spread the reserved caramelized onions evenly over the top of the meatloaf. Then sprinkle the Gruyere or Swiss cheese evenly on top to create a rich, melted crust during baking.
  5. Bake to Perfection: Preheat the oven to 350°F (175°C). Bake the meatloaf for 55 to 65 minutes or until the internal temperature reaches 160°F (71°C). Remove from oven and let the meatloaf rest for 10 minutes before slicing to keep the juices locked in.

Notes

  • Use Fresh Onions: Fresh, sweet onions caramelize better and add natural sweetness.
  • Don’t Overmix: Mix ingredients gently to maintain a tender texture.
  • Rest Before Slicing: Allows juices to redistribute for moist slices.
  • Use a Meat Thermometer: Ensures perfectly cooked meatloaf without drying out.
  • Caramelize Slowly: Patience prevents burning and deepens flavor.
