Crab Filling

  • 1/4 tsp paprika

Coating & Frying

  • 2 large eggs, beaten
  • 1 cup breadcrumbs (use gluten-free breadcrumbs for gluten-free option)
  • Oil for frying (neutral oil like canola or vegetable oil)

Instructions

  1. Prepare the Crab Mixture: Gently combine fresh lump crab meat, softened cream cheese, shredded cheddar, chopped green onions, Old Bay seasoning, garlic powder, and paprika in a bowl. Mix just until blended, keeping crab lumps intact for texture.
  2. Form the Bombs: Shape the crab mixture into golf ball-sized round balls, ensuring they are compact enough to hold together during cooking.
  3. Coat the Crab Balls: Place beaten eggs in one bowl and breadcrumbs in another. Dip each crab ball in egg wash, then roll thoroughly in breadcrumbs, ensuring an even golden crust.
  4. Fry to Perfection: Heat oil to 350°F (175°C) in a deep pan or fryer. Fry crab bombs in batches for 3-5 minutes until golden brown. Remove and drain on paper towels to remove excess oil.
  5. Serve Hot: Serve immediately with your favorite dipping sauces such as tartar sauce, spicy remoulade, or lemon garlic aioli for maximum flavor and crispness.
