Instructions

  1. Prepare the Filling: In a skillet, heat olive oil over medium heat. Add diced onions and bell peppers and sauté until softened, about 3-4 minutes. Add cooked shredded chicken, cumin, paprika, chili powder, salt, and pepper. Stir well and cook for another 3-4 minutes until spices are fragrant and filling is well combined.
  2. Assemble the Quesadillas: Lay out the small tortillas. Sprinkle a generous layer of cheddar and Monterey Jack cheese on half of each tortilla. Spoon the chicken and veggie mixture evenly over the cheese. Top with more cheese, then fold the tortilla in half to enclose the filling.
  3. Cook until Golden and Melty: Heat a non-stick skillet or griddle over medium heat and lightly brush with olive oil or butter. Place quesadillas in the skillet. Cook 2-3 minutes on each side until golden brown and cheese is melted inside, pressing gently with a spatula to seal edges.
  4. Slice and Serve: Remove quesadillas from the skillet and let rest for one minute. Slice into mini wedges and serve warm with desired garnishes and dipping sauces.
