Instructions

  1. Toast the Rice: Heat 2 tablespoons of vegetable oil or butter in a large skillet over medium heat. Add the rinsed and drained long grain white rice and sauté, stirring frequently, until the rice turns golden and smells nutty, about 4-5 minutes. This enhances the rice’s flavor and texture.
  2. Sauté Aromatics: Add the finely chopped onion and minced garlic to the skillet with the toasted rice. Cook another 3-4 minutes until the onion becomes translucent and soft, releasing its natural sweetness.
  3. Add Spices and Tomato: Sprinkle in 1 teaspoon ground cumin, 1 teaspoon chili powder or paprika, and salt and pepper to taste. Stir well to coat the rice and onions evenly. Pour in 1 cup of tomato sauce or puree, mixing thoroughly to create a vibrant and flavorful base.
  4. Pour in Broth and Simmer: Pour 1 ¾ cups of chicken or vegetable broth over the rice mixture. Increase heat to bring it to a boil, then reduce the heat to low and cover with a tight-fitting lid. Allow the rice to simmer gently for about 15-20 minutes, until all the liquid is absorbed and the rice is tender.
  5. Fluff and Finish: Remove the skillet from heat and let the rice rest, covered, for 5 minutes. Then gently fluff the rice with a fork to separate the grains. Stir in freshly chopped cilantro if desired before serving.
